Ingredients:
1 whole Branzino, cleaned and gutted
2 lemon slices
2 sprigs fresh thyme
2 sprigs fresh rosemary
Sea salt and freshly ground black pepper, to taste
Extra virgin olive oil (EVOO), for drizzling
Instructions:
Prep the Fish: Preheat the pizza oven to 400°F (or your regular oven to 400°F). Rinse the Branzino under cold water and pat it dry with paper towels.
Stuff & Season: Stuff the cavity with lemon slices, thyme, and rosemary sprigs. Season the inside and outside of the fish with sea salt and pepper, then drizzle with olive oil.
Roast: Place the fish on a baking tray lined with parchment paper. Roast in the pizza oven for 12 minutes, or until the skin is crispy and the flesh is opaque and flakes easily with a fork.
