Tofu Zen Stir-Fry

Kickstart your week with this vibrant Tofu Zen Stir-Fry, a colorful mix of protein-rich tofu and fresh veggies. Tofu provides a great source of plant-based protein, while the array of veggies brings fiber, antioxidants, and essential nutrients. With the added benefits of ginger and garlic for digestion and immune support, this stir-fry is as nourishing as it is delicious. Serve it over zucchini noodles for a light, gluten-free twist on a classic. Store leftovers in the fridge for up to 3 days.

Serving Size: Serves 4

Ingredients:

  • 4 medium zucchinis, spiralized into noodles

  • 2 blocks extra-firm tofu, pressed and cubed

  • 4 tbsp gluten-free tamari

  • 2 tbsp toasted sesame oil

  • 4 cloves garlic, minced

  • 2 tbsp grated ginger

  • 2 red bell peppers, thinly sliced

  • 2 cups broccoli florets

  • 2 carrots, julienned

  • 2 cups snap peas, ends trimmed

  • 4 green onions, thinly sliced

  • Sesame seeds and cilantro for garnish (optional)

Instructions:

  1. Heat 1 tbsp sesame oil in a large skillet or wok over medium heat. Add tofu cubes and cook until golden, then set aside.

  2. In the same skillet, add remaining oil, garlic, and ginger. Sauté until fragrant.

  3. Add bell pepper, broccoli, carrots, and snap peas. Stir-fry until veggies are tender-crisp.

  4. Stir in tamari, green onions, and tofu. Toss well to combine.

  5. Serve over zucchini noodles, garnished with sesame seeds and cilantro if desired.
